The Recipe

Recipe is adapted from The Food Network 


Ingredients:

  • 2/3 cup ketchup
  • 1 Cup of TBJ Gourmet Bacon Jam 
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 clove garlic, grated
  • Kosher salt and freshly ground black pepper
  • 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds)

Directions

  1. Making a marinade: Combine the ketchup, TBJ bacon jam for bacon flavored seasoning, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. 
  2. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. 
  3. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  4. To cook: Remove the chicken from the bag and grill over indirect heat, covered, until cooked through, lightly charred and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.


Tip: If you are wondering when to apply BBQ sauce to chicken, you have several options. You can marinate your meat overnight. Or, you can marinate your meat the morning of - giving your chicken at least a few hours to soak in the goodness.
